Easy Six-Shooter Cornbread:
Ingredients:
2 boxes of Jiffy Corn Muffin Mix
1 can of creamed corn (DO NOT drain)
1 can of corn (drained)
2 cans of chopped green chilies (drained)
Shredded Colby-Jack Cheese for topping (approx. 1/2 cup)
4 Quart Casserole Dish or 9/13' pan depending on desired thickness
(I prefer thicker slices but sometimes when cutting into long stick-like lengths for dipping I will choose the latter. Just remember that when you choose to go with the casserole dish, you may need to adjust your time to be certain your corn bread is cooked thoroughly.)
Directions:
Follow directions on box for Corn Bread-Johnny Cake adding only 1/2 cup of milk (the loss of liquids will be made up with the creamed corn). Add your cans of corn (creamed and regular) & green chilies and mix well. Pour into either a 4 Quart Casserole Dish or a 9x13 pan. Cover with lid or foil. Cook as directed on box. While still hot, sprinkle with cheese.
I generally set the time for the least amount, checking the center with a toothpick (adding more time in increments of 5mins). The toothpick should come out with moist crumbs sticking to it but not wet with batter. And typically the edges will pull away from the sides and begin to brown as another indicator when done.
Another alternative would be too add a cup of shredded cheese (or very small crumbs) to the batter.

(The original recipe called for much smaller amounts of the ingredients. But, with our rather large Cowboy Posse, I ended up beefing things up a bit. I also added cilantro. I suppose you could opt not to put in the cilantro...but, I think that's what made this recipe taste so good.)
1 Head of Chopped Cabbage
5 Seeded & Chopped Green Chilies (I used canned whole chilies)
1/2 of a Large Sweet Onion, Chopped
1 can Diced Tomatoes, Drained
Chopped Cilantro (I used a handful)
Vinegar to Taste (I used Rice Wine Vinegar but I suppose any would do)
Salt & Pepper to Taste
Mix the first 5 ingredients together in a large salad bowl. Add vinegar, salt & pepper. Refrigerate. Will keep for several days.
